White Labs Belgian Ale Yeast (WLP550)

Characteristics

White Labs WLP550 Belgian Ale Yeast is a good yeast for most any Belgian beer style you might try. This includes Saison, Belgian Ale, Belgian Brown, and wit styles.
The flavors produced by this yeast are often fruity and phenolic.
WLP550 is a great yeast to brew with in summertime, as the temperature range is higer than usual at 68-78 F.
I have used this yeast for a Saison. One thing to be sure of is to give it plenty of time to work to dryness. This yeast is a bit slower than many yeasts, but, given time, rewards the brewer with a nice fermentation.

All Grain Recipe - Saison ::: 1.062/1.012 (5 Gal)

Grain Bill

8 lbs. - 2 Row Pale Malt
2.5 lbs. - Munich Malt
1 lb. - Wheat Malt
1 lb. - Candi Sugar Syrup (link)

Hop Schedule (44 IBU)

1 oz - Northern Brewer hops (60 min.)
1.5 oz - Saaz hops (30 min.)
2 oz - East Kent Goldings hops (5 min.)

Yeast

White Labs Belgian Ale Yeast (WLP550) - 1800 ml starter

Mash/Sparge/Boil

Mash at 151° to 153° for 60 min.
Sparge as usual
Boil for a total of 90 Minutes
Cool and ferment at 65° to 70°

Notes

If you are so inclined, you can add orange zest, corriander, chamomile at the end of the boil.
