Chamomile Agave Wheat

Originally conceived as a simple American Wheat recipe to build up some Kolsch yeast, this beer turned into something else altogether.
The addition of six bags of Chamomile tea (composed of 100% chamomile flowers) gives a mellow spicy character to the brew. They say that chamomile is also supposed to be calming and cure damn near everything - I seriously doubt 99% of these claims, but, whatever, it tasted good.
While looking for some honey to add, I came across some Agave Nectar. This is a very light product produced from the agave plant (the same one that makes Tequila.) It is quite comparable to honey - very sweet and a subtle flavor.



All Grain Recipe - Chamomile Agave Wheat ::: 1.045/1.012 (5.5 Gal)

Grain Bill

5 lbs. - Pilsner Malt
5 lbs. - Wheat Malt
1/2 lb. - 2 Row Malt
1 lb. - Agave Nectar (Added at the end of boil)
6 bags - Chamomile Tea (Added 10 min. before flameout)

Hop Schedule (17 IBU)

1/2 oz - Amarillo (60 min.)
1/4 oz - Amarillo (10 min.)

Yeast

White Labs German Ale/Kolsch Yeat (WLP029) - 1800 ml starter

Mash/Sparge/Boil

Mash at 152° to 154° for 60 min.
Sparge as usual
Cool and ferment at 64° to 66°
