The Alchemist Heady Topper IPA

From the Brewer

"We love hops - that's why our flagship Double IPA, Heady Topper, is packed full of them. Heady Topper was designed to showcase the complex flavors and aromas these flowers produce. The Alchemist has been brewing Heady Topper since 2003. This Double IPA is not intended to be the strongest or most bitter DIPA. It is brewed to give you wave after wave of hop flavor without any astringent bitterness. We brew Heady Topper with a proprietary blend of six hops each imparting its own unique flavor and aroma. Take a big sip of Heady and see what hop flavors you can pick out. Orange? Tropical Fruit? Pink Grapefruit? Pine? Spice? There is just enough malt to give this beer some backbone, but not enough to take the hops away from the center stage."

The Beer

A tremendous IPA showcasing everything great about hops. The hopping schedule in Heady Topper is a bit diffrent than you might be used to. There's the standard 30 minute and flame-out additions. Then, to showcase the aroma qualities of the hops you cool the wort down to 170F and add hops in the whirlpool for another 15 minutes before finishing cooling and racking to the fermenter. Of course, after that, there are two dry hop additions - a seven day followed by another 5 day after racking off.

13.5 lbs - Pale Malt (2 Row) UK (3.0 SRM)
4.0 oz - Caravienne Malt (22.0 SRM)

Hop Schedule (100+ IBU)

1.50 oz - Simcoe [13.00 %] - Boil 30.0 min
1.00 oz - Apollo [17.00 %] - Boil 0.5 min
1.00 oz - Cascade [5.50 %] - Boil 0.5 min
1.00 oz - Simcoe [13.00 %] - Boil 0.5 min
** Reduce wort temp to 170/Whirlpool **
1.00 oz - Centennial [10.00 %] - Steep/Whirlpool
1.00 oz - Columbus (Tomahawk) [14.00 %] - Steep/Whirlpool
1.00 oz - Simcoe [13.00 %] - Steep/Whirlpool
Primary Fermenter
1.00 oz - Chinook [13.00 %] - Dry Hop 7.0 Days

White Labs California Ale Yeast (WLP001) or Safale US-56
OR - The Yeast Bay - Vermont Ale

Mash/Sparge/Boil

Mash at 151° to 153° for 60 min.
Sparge as usual
Boil for 60 minutes
Cool and ferment at 66° to 68°
